Authentic Spanish paella with saffron rice, seafood, and chorizo. A showstopper dish for family gatherings.

Toast saffron in a dry pan, then steep in warm broth for 10 minutes.
Brown chicken and chorizo in a paella pan. Remove and set aside.
Sauté peppers and onions. Add rice and toast for 2 minutes.
Add saffron broth, arrange meat and seafood on top.
Cook without stirring until rice is done and slightly crispy on bottom.
