Smoked Brisket

Texas-style smoked brisket with a perfect bark. Low and slow is the way to go!

Ingredients
- 12 lbs whole brisket
- 0.25 cup coarse black pepper
- 0.25 cup kosher salt
- 4 cups oak wood chunks
Instructions
- 1Trim brisket, leaving 1/4 inch fat cap.
- 2Apply salt and pepper rub generously.
- 3Smoke at 225°F for 10-12 hours until internal temp reaches 203°F.
- 4Wrap in butcher paper when bark is set.
- 5Rest for at least 1 hour before slicing against the grain.
